Kamairicha is a type of Japanese green tea made by pan-frying (Chinese style) instead of steaming.

This tea, made from a rare tea variety called Shizu 7132, has a slight scent reminiscent of sakura leaves or sakura mochi rice cakes.
The unique scent comes from coumarin, a fragrant compound also found in sakura leaves.

Kama-iri (pan-frying) process also adds a pleasant sweetness to this tea.

Among the teas made from Shizu 7132 that I have tried, this tea is one of the most fragrant ones.

This tea does not contain sakura leaves or other additives. Enjoy the natural scent of the tea!

He explains as below: The unique fragrance of Shizu 7132 becomes stronger with time from the tea harvest season. Also, the tea gets more fragrant when there are fewer tea leaves in it rather than right after opening the bag. Oxidation and aging work positively for this cultivar. Interesting, isn’t it?
